Need some Catskills eye-candy? Check out this article in Modern Farmer about Table on Ten, a casual eatery utilizing fresh local ingredients in Delaware County’s Bloomville hamlet. Owner/downstate ex-pat Inez Valk moved to the northern Catskills with her partner Justus Kempthorne after falling in love with the area. Once here, they purchased a parcel of land with a pond and proceeded to cobble together a cabin from wood scraps and anything they could find, living in a teepee while building it. The photos of Valk’s property and the farm dinner she held to thank those who provide local ingredients to her restaurant are truly drool-worthy, making even the most cynical among us think that living in the rural Catskills is a dream come true.

Meanwhile, we love this dose of hopeful reality that Valk hands out at the end of the piece:

“This is an amazing place, dotted with amazing people,” she says. “It’s flattering to have our lives perceived as a romantic ideal, but the winters are long, and we tend to be isolated. The work is really hard, without the corollary of significant financial reward. Few things come easy. Everything has to be earned.”

Couldn’t have said it better ourselves.
