Local Booze Alert: Delaware Phoenix Distillery, Walton
Kandy Harris | March 22, 2013We have a hard and fast rule here at Upstater HQ: If a town we’re exploring has a distillery, we have to talk about it. And upstate New York has some seriously good local hooch. If you’re not buying the homegrown stuff, you don’t know what you’re missing.
The Delaware Phoenix Distillery, located in Walton in Delaware County, hand-crafts award-winning bourbons, rye whiskey, and corn whiskey that can be found in a variety of specialty shops not only here in upstate New York, but Manhattan and Brooklyn, too. Absinthe fans need not feel left out, for Delaware Phoenix proprietress Cheryl Lins also makes two types of absinthe. Considered their “traditional” absinthe, Walton Waters utilizes seasoned wormwood harvested from Virginia and New York and a blend of herbs that include anise, lemon balm, fennel, and lemon thyme. Meadow of Love absinthe is their more floral offering, and it’s made with the same herbs as Walton Waters in different portions, with some violet throw in for good measure.
