Locavore Restaurants, Waterfront Vistas…Kombucha Kits?

Just when we thought things couldn’t get much more hip in Kingston, we heard that Kombucha Brooklyn (KBBK) has picked up and moved the whole enchilada to somewhere near Kingston. Where, exactly? “To the outskirts of Kingston” is as much information as we gleaned from KBBK’s blog, but we can tell you that the purveyors of the fermented health drink made from bacteria are big sellers of kombucha kits for home brewing. In fact, along with the move, they’ve abandoned their bottled beverages to focus solely on home brewing kits and accessories, not to mention cultivating SCOBYs, which you can order off of their website. And just in case you’re not from Woodstock, a SCOBY is a disk-shaped colony of bacteria and yeast (SCOBY stands for “Symbiotic Colony of Bacteria and Yeast”) which is then used with black tea and sugar to create the fermented drink that some proclaim help prevent cancer, increase liver function, boost immunity, cure hangovers, and just about any other malady you can think of. So, why did KBBK decide to make Ulster County their new home? According to their blog, “we’re trading sirens for birdsongs, exhaust for dust, bikes for boats, and towers for trees. Not all of us grew up in a big city, so it’s been a pleasant return to rural life for some, and for others an unfamiliar but welcome change of scenery and lifestyle.” Welcome to the neighborhood, KBBK.
